So, in case you did not notice in my previous blog, we Texans know how to eat. While in Dallas, my sister told me I had to try the "roasted corn in a cup" from Fuel City (do not be alarmed, most of the good food in Texas is served at gas stations). I heart corn in almost any way shape or form. We ended up taking a recommendation from a "corn in the cup" expert, and went to a teeny tiny stand on the side of the road. We ordered tacos from a window, and then proceeded to the corn cart. There was a sweet man (who did not speak English), who introduced me to the new love in my life. It is also referred to as Elotes. Elotes are a popular Mexican street food. Here is how it works: You take an ear of corn, scrape all the kernels off into a piece of aluminum foil. Once in the foil, you add a heap of butter straight from the block along with salt and pepper. You then take a styrafoam coap and layer the ingredients in this order; corn/butter, sour cream mix, Fresco white cheese, repeat one more time, top with parm/hot sauce/and lime juice, cover with foil, pierce spoon through top and then spear lime wedge onto top of spoon; EAT AND ENJOY!
List of Elote Ingredients:
- Roasted corn on the cob
- Heavy mayonaise mixed with Sour cream
- Butter (no margarine allowed)
- Parmesan cheese
- Fresh lime juice
- Hot chili sauce
- Lemon pepper (this one’s a Texas thing)
- Salt
- Pepper

Okay, i've been to texas a million times and i've never had corn in a cup! I want some NOW! How yummy does that look!
